Warm & Crunchy Goat Cheese Salad

I really love goat cheese, and even more in salads. At the restaurant, there’s always this salad with a piece of deep-fried goat cheese. However, my version will be healthy, because we will bake it instead on frying it! The added strawberries turn it into a real delicacy!

2 servings

Ingredients
125 g (1) of low in fat soft goat cheese, 6% M.F.
30 ml (2 tablespoons) Panko bread crumbs
5 cups (1.25 litres) baby spinach
250 ml (1 cup) strawberries, sliced
1 sweet red pepper, sliced
1 apple, diced
30 ml (2 tablespoons) almonds, chopped

Dressing
15 ml (1 tablespoon) olive oil
15 ml (1 tablespoon) apple juice
15 ml (1 tablespoon) cider vinegar
15 ml (1 tablespoon) maple syrup
5 ml (1 teaspoon) Dijon mustard
Salt and pepper, to taste

Directions
1- Preheat oven to 220 °C (425 °F).
2- Roll with your hands 6 balls of goat cheese and then roll them in bread crumbs.
3- On a baking sheet covered with parchment paper, bake the goat cheese for 10 minutes. Turn and bake for another 10 minutes.
4- During this time, prepare the dressing. Mix all the ingredients together, and set aside.
5- To prepare the salad, use a large bowl to mix the spinach, strawberries, sweet red pepper, apple, and almonds.
6- When the goat cheese is hot, add the dressing to the salad and mix thoroughly. Garnish with goat cheese pieces.

Each serving of this recipe contains:
360 calories / 40 g carbs / 17 g proteins / 17 g fat / 7 g fibres

Side dish (per serving)
25 g (1) slice of whole wheat bread, grilled

Each serving of this side dish contains:
77 calories / 13 g carbs / 5 g proteins / 2 g fat / 2 g fibres
