Need a gourmet break? This muffin recipe will satisfy anyone with a sweet tooth, like me! The blueberries are wonderfully light, and the white chocolate pairs beautifully! These blueberry muffins are extremely moist and melt in the mouth, two essential requirements in my opinion.
Yield: 12 blueberry muffins
Prep time: 20 minutes
Cooking time: 12-15 minutes
Ingredients
- 1 cup (250 ml) buckwheat flour
- 1 cup (250 ml) unbleached all-purpose flour
- ½ tsp (2.5 ml) baking soda
- 1 ½ tsp (7.5 ml) baking powder
- ½ tsp (2.5 ml) salt
- 2 eggs
- 1/3 cup brown sugar
- 1/3 cup (75 ml) olive oil
- 1/3 cup (75 ml) milk of choice
- 1 tsp (5 ml) vanilla extract
- 100g white chocolate, coarsely chopped
- 1 cup (250 ml) blueberries
Preparation
- Preheat oven to 400 degrees F.
- In a bowl, combine all dry ingredients (flours, baking soda, baking powder and salt).
- In a second bowl, whisk together eggs, brown sugar, olive oil, milk, and vanilla.
- Gradually add dry ingredients to liquid ingredients. Stir with a spoon until smooth.
- Using same spoon, gently stir in blueberries and white chocolate.
- Divide equally evenly among muffin tins and bake for 12 to 15 minutes, or until lightly browned on top.
