Mango Shrimp Brochettes

People take advantage of summer time to enjoy outdoors barbecue. It is the ideal time for brochettes of all kinds. I suggest you try this delicious mango shrimp brochettes recipe. Its freshness as well as its exotic taste will certainly please you!

4 servings
282 calories/ 20g carbs/ 13g fat/ 24g proteins

Ingredients
3 tablespoons olive oil
1 lime (zest and juice)
5 coriander leaves, finely chopped
3 garlic cloves, finely chopped
1 lb of big shrimps, peeled and deveined
2 mangoes, cubed
Salt and pepper, to taste
12 metal skewers

Directions

1. Preheat barbecue to high output.

2. In a large bowl, mix the olive oil, lime zest and juice, coriander, and garlic. Add the shrimps and marinate for about 30 minutes in the refrigerator.

3. Alternately thread the shrimps and mango pieces on the skewers. Sprinkle with salt and pepper.

4. Grill the brochettes for about 2 minutes on each side or until the shrimps are cooked. Brush with marinade during cooking.
